One of the first and most important steps of the quality olive oil production process is the planting and cultivation of olive saplings. The care to be taken in this process significantly affects the productivity and fruit quality of the olive tree.

Harvest
The prerequisite for obtaining a quality olive oil is that the olive fruit is harvested at the right time and conditions and entered into the production process. Olives damaged during harvest or kept in unsuitable environments after harvest undergo structural change by interacting with heat and light.
Offering two different options as early harvest and normal harvest in its products, Miraculous, produces premium oils only by hand and carefully, without damaging them, during the early harvest period startingthe end of September to mid-October and the harvest periodmid-October to the beginning of January.
Pressing
Another variable leading to quality in production is the pressing time and shape of olives. Miraculous olive oils are obtainedolive fruits, which are transported to the plant without waiting on the harvest day, kept in cold rooms to prevent heating before production, and then pressed in the high-tech GEA Westphalia pressing line.
In order to keep the temperature below 27 degrees Celsius throughout the production process, at the beginning of the pressing line the machines are cooled with water, the olives, which are crushed into pulp, are thoroughly kneaded in the dough mixing tanks and left for a while, then transferred to the decanter unit solids and liquids (oil and water) are separated. The oil and water separatedthe olive paste are finally separatedeach other in the separator unit and a golden green oil is obtained.
Filling And Storage
Storage conditions are very important to preserve the post-production quality of olive oil. Miraculous Olive Oil is kept in chrome tanks for a while to purify the pulp remaining in the oil after production, then it is filtered and transferred to chrome tanks again. After this stage, the products are kept as fresh as the first day thanks to the tanks fed with nitrogen gas to cut the contact of the oil with oxygen and the storage facility designed with air conditioning control to provide suitable storage conditions.
Our products, which are kept in chrome tanks as much as possible to preserve their freshness, can be bottled at 800-1000 lt per hour with filling options250 ml to 18 lt, thanks to our sophisticated filling machine.
